Southern Ocean Deep Sea Flathead

Wild South Seafood provide the consumer with premium fish from the pristine, cold and deep Southern Ocean. This is where they consider the location of the best and most unpolluted wild-caught fish in the world. The fish is collected from a community of boats when they pull up at the wharf, beautifully hand filleted with care, packed into 2 person sized fillets, vacuum packed and immediately individually quick frozen. All within a few hours of coming off a boat.

This means that even though the product is frozen, it is generally ‘fresher’ than most ‘fresh’ seafood.

These fillets contain no bones, just pure white flesh. Flathead has a low oil content which results in fine, flaked flesh. Low oil content also means it is a very ‘non fishy’ tasting fish. Simply cook for a couple of minutes each side in a knob of butter. Simple, fresh and delicate.

Spencer Gulf King Prawns

Spencer Gulf King Prawns have been added into the Wild South Seafood line because one of the owners earliest childhood memories was going crabbing with their Grandma off the jetty at Franklin Harbour. It was this jetty that the Spencer Gulf prawn fleet use to pull up at. These days they are all running out of Boston Bay and Port Lincoln just down the coast and round the corner a bit.

The Spencer Gulf prawn fishery is one of the best managed fisheries in Australia. The Spencer Gulf prawn fishery is MSC certified, which is kind of equivalent to the heart foundation tick for sustainability. It is good if you have it, but we should not necessarily judge those that don't as ipso facto bad.

The Spencer Gulf Prawn people have also known for quite some time that the best way to treat seafood that otherwise has a particularly short shelf life and is susceptible to toxins, is to snap freeze it at the source. All Spencer Gulf Prawns are frozen at the source and have been for a long time. Good on you Spencer Gulf for keepin' it fresh best!

Simple, green (uncooked/raw) really fresh prawns that have not been 'defrosted for convenience' but rather are still frozen when Wild South Seafood have bought them so they can decide when is convenient.

Yellowfin Tuna has a mild meaty flavour, The flesh bright red when raw and turns brown to greyish tan when cooked and is firm and moist with large flakes.

This salmon is now sourced from Ireland. Irish salmon conditions are unique. Huge sea pens, located on the Atlantic coastline, exposed salmon to strong marine currents and provide more than 10,000 cubic meters of water to swim in - the equivalent of a large cathedral.

Stocking densities are very low: approximately two fish per 1,000l of pure seawater and, over an average of 18 months, salmon swim an equivalent of 13,000kms before reaching market size, comparable to the distance travelled in their natural habitat
