Puyaubert's Bozeto Rosé is crafted from 50% Garnacha and 50% Tempranillo, sourced from two mature plots on the highland, mineral hillsides of Ábalos (El Silo) and San Vicente de la Sonsierra (Los Pozos) in the Rioja Alta. Made with the direct press method using wild yeasts, three quarters of the wine was raised in tank, on lees, while the rest was matured in used 600-litre demi-muids, bringing texture, complexity and a nip of structural gravitas to the blend.

This is a blend of 80% mature-vine Tempranillo (from Valdilecha at 780 metres) with the local white grape Malvar (from Belmonte at a similar altitude) making up the balance. The vines are all biodynamically reared and the grapes hand-harvested. Both varieties were co-fermented with natural yeasts, then the wine spent 20-25 days on skins and was aged in cement and stainless-steel tanks.

While most entry-level wines from this region today are based on Tempranillo (a variety both easier and more profitable to grow), here Garnacha represents 60% of the blend. This Garnacha hails from the sandy, river stone terroir of El Agudo—a 60-year-old plot at Alfaro on Monte Yerga (in Rioja Oriental). The Tempranillo is drawn from a selection of mature vines in Ábalos (high county Rioja Alta), and there is also some Ábalos Graciano, adding freshness and finesse. Puyaubert ferments this wine in a combination of concrete and steel tank, then ages it for six months in concrete and 5,000-litre oak vats. These days, Tom includes a measure of semi-carbonic maceration for extra buoyancy.

Bannockburn’s Shiraz is drawn predominately from vines in the south-facing Winery Block (planted in 1990) and some declassified De La Roche (planted in 2007). All sites possess soils of mainly volcanic scoria over basalt, clay and loam with a limestone clay base.
The 2020 was a low yielding year and a cooler season than 2019. The fruit was wild fermented with 10% whole bunches and some carbonic maceration. The wine spent two weeks on skins before being pressed, settled and racked to French oak hogsheads (10% new) for 12 months élevage. Alongside a reduction in the use of new barrels, Matt Holmes has gradually been introducing more influence of carbonic in his Shiraz. Holmes feels the mature Winery Block has inherent savoury qualities (due to the clay/limestone, old vines and poor soils) and the carbonic impact helps to lift the impression of brightness and fruit purity.

Jeff Byrne made just one wine in the difficult 2020 season, a Pinot Noir Shiraz blend. This year sees the blend going back to what Jeff tells us should be the norm going forward, a more classic homage to his Hunter roots. The 2021 release is 90% Shiraz and 10% Pinot Noir, with fruit sourced from two sites. The Shiraz is from 22-year-old vines on a lower site in Orange (680 metres) and the Pinot Noir is from Springvale (as per Byrne’s 100% Pinot Noir).
Both parcels were destemmed and cold soaked for four days before being fermented on skins for 10 days. The wine was then lightly pressed and sent to 500-litre barrels (10% new) where it rested for 10 months before blending.

As you would expect of this producer, Meltwater’s hand-crafted Marlborough Sauvignon hits all the right notes, with considerably more texture and interest than this category typically delivers. For a start, it’s low-cropped from a single, certified organic vineyard in the southern foothills of the Wairau Valley. The grapes were hand-harvested into small bins and indigenous yeast fermentation occurred in tank. —an even rarer approach! For good measure, Paterson explains that during natural fermentation, a good portion of malic acidity drops out of the wine. This results in more palate breadth and means he can ferment all the sugars without having to rely on artificial balance. The wine was aged on lees for nine months over winter.

This is the second release of Mike Paterson’s small batch, single-vineyard Chenin Blanc. Alongside Pinot Noir and Chardonnay, the Brancott Valley’s Wrekin Vineyard is also home to a small parcel of Chenin Blanc. Although demand for the grape is increasing throughout the region, Mike has managed to maintain his allocation from close friends and owners, Jan and Andrew Johns. To ensure the grape’s thick skins and high acidity are mellowed in Marlborough’s moderate climate, Patterson seeks ripeness, with 13° Baumé the norm. This drives the style, which is a wine of generous texture that works beautifully at the table.
The handpicked fruit is whole-bunch pressed and sent with full solids to a seasoned puncheon for a wild ferment. The Meltwater Chenin is made much like the Corofin Chardonnays but taken out of oak a little earlier.

Gaillac méthode ancestrale wines are the mother of pét-nats, and there is no better example than the Plageoles Mauzac Nature. Gaillac’s very long history of producing méthode ancestrale sparkling wines goes back to the 1500s (long before Champagne began producing sparkling wines). In fact, so synonymous was Gaillac with pét-nats, back in the day Méthode Gaillacoise was a widely used synonym for méthode ancestrale. The Plageoles example is from a 40-year-old parcel of the exceptionally rare Mauzac Rose grape variety.
In simple terms, the naturally fermented base wine is chilled to stop the fermentation when there is still 25-30 g/L residual sugar. The following spring, the wine is put into bottle and the fermentation continues under cork, producing the bubbles. There are no other additions and no need for dosage, as the bottle fermentation naturally stops when there is still a touch of residual sugar left in the wine.
