About the product

Over a base of juniper, angelica, cassia, coriander, orange and lemon peel, An Dúlamán uses five types of local seaweed. Channel Wrack adds firmness, Sugar Kelp gives sweetness and Dulse spikes the blend with its savoury saltiness. Pepper Dulse is the most elusive local seaweed and yields a distinctive spicy, umami note.

Tasting Comment:

This Shochu is made with 100% freshly harvested Imo (sweet potato) from the island of Kyushu. It has beautiful purity on the nose with hint of tropical fruit. It gives very warm and gentle mouth feel. The palate shows good balance between the gentle acidity and the sweetness, and exhibits hints of apple, pear and fennel. It is very light but lively.

Food Suggestion:

Shochu straight or over ice, or with cold spring water. Can be gently warmed. Add good quality green tea, or fruit juice. Great for Shochu cocktail.

Ours is a corn whiskey made from 80% New York State organic corn and 20% malted barley. It is double distilled and reduced to a smooth, drinkable 80 proof. Bright with a sweet slap of corn, this is our take on a classic American whiskey.

Ester Dry, and the Marrickville distillery’s own mandarin cordial, made using whole mandarin shrub including the skin, acid and sugar for balance. Essentially, this is a Gimlet ready to go, and so is designed to be served straight-up (at about -10 degrees), but the Ester team tell us this also works well served long with soda or Prosecco. We're definitely up for that, but it's so delicious, we're thinking it would be dangerous

Considering Felix Clark started his spirits journey in a quest for the perfect Negroni Gin, it stands to reason that his prebatched Negroni has plenty riding on it. Ester’s blend takes in equal measures of Ester Dry (the holy grail itself), Campari, and “the best damn Vermouth on the market (when you can find it!)”—Cocchi Vermouth di Torino. To mimic the icy stir down in the mixing glass, Clark uses 20% filtered water.
