It took one slice of New York pizza drizzled with a sweet, fiery honey and James Thompson was hooked. It was the condiment Australia was missing. Teaming up with his brother-in-law, Daniel Jalalaty, whose grandfather had hobby beehives, the pair set off to create a honey of their own. After months of experimenting, Quinby’s Chilli Honey was born. Australian habanero chillies are crushed and gently heated to infuse with local wildflower honey, which is then strained and bottles.
