Organic Flour
Organic flour is made from pesticide-free grains cultivated in soil using only natural fertilisers. The flour has not been chemically ripened or unnaturally treated. Organic grain is also reported to grow stronger and more determined, absorbing more minerals from the soil and making the flour healthier and more nutritious for consumers. Everything created with our organic flour has the power to be both healthier and tastes better!

Sugars vs Sweeteners
The age-old debate: Is it healthier to use sugars or sweeteners? There have been plenty of myths and misinformation passed around about both sugars and sweeteners over the years. When it comes down to choosing which is ‘healthier’, it really depends on a whole range of factors, from the sugar or sweetener in question to your own health and body. What we aim to do is to provide you with ethically sourced, organic sugars and sweeteners so that, whether you choose to use sweeteners or sugars in your baking, you know that you’re getting the best quality ingredient possible.
If you want to buy organic raw sugar, there are more options to choose from than just your run of the mill organic cane sugar. We currently stock a wide range of raw sugar, organic and ethically sourced, including Rapadura sugar, coconut sugar, panela, molasses, brown sugar, and icing sugar.
Organic Cane Sugar Alternatives
You also have your pick when it comes to organic sweeteners. When it comes to baking chocolatey goodness, you have probably heard the debate over whether cocoa, cacao, or carob is the best chocolate flavour to go with. Let’s break down what each of them is and the differences between the three.
Cocoa
The most commonly used of the three is cocoa powder, which is what you will generally find in most supermarkets. This powder is made from beans that have been fermented, roasted, and processed at high temperatures. This results in a less bitter flavour and deeper colour than cacao.
Cacao
Cacao is similar to cocoa except for a few steps in the process. Though cacao beans are fermented, they are not roasted and never exposed to high temperatures like cocoa is. This means that they retain some of that bitter flavour and keep the nutritional value that is lost to cocoa due to the roasting and high temperatures.
Carob
Carob is often considered a healthy substitute for chocolate. It can be used in much the same way as cocoa or cacao products are. The main difference in taste is that Carob is less rich and chocolatey but sweeter than cocoa and cacao. It also doesn’t contain any caffeine.

It is a plant-based thickening and stabilizing agent that emulsifies and gives the baked good elasticity and viscosity. In this way, it acts a lot like gluten, making it the perfect substitute in gluten-free baking.
When it comes to healthy, sustainable and ethical baking, it’s important to think beyond just the ingredients you use. There are plenty of single-use products involved in baking that people don’t even think about using that can impact your health and the environment.
