At the risk of incurring the wrath of the Gods, we do make seem to make lovely cabernets here at Bosworth/Spring Seed, and this Cockscomb is no exception. McLaren Vale makes great Cabernets, in fact – we always seem to get nice ripe tannins and herbal intrigue without the greenness The nose is bright and fresh and bursting with blue fruits (violets and red currants ) and the wine has terrific tannins (without being too stiff) and a lovely, persistent finish. All in all a great example of a Cabernet.

2015 was a great white year in McLaren Vale (no shark pun intended) - this wine shows length, balance and freshness with citrus and stone fruit and a hint of pineapple. This wine shows so much flavour and character for a wine that is completely unoaked. ‘Four o’clock’ is pretty versatile, too; great as an aperitif (don’t serve too chilled) and wonderful with a range of foods: roast chicken and mushroom risotto is my standard food matching suggestion.

Gypsy is made using our home grown organic Chardonnay, which is picked early to get some lovely fresh green apple characters and pressed off skins for cool fermentation in stainless steel. ‘Gypsy’ is a classic Blanc de Blanc style, with a pale straw colour (with a hint of green apple), fine mousse and gentle characters of citrus. A splendid wine for celebration, Gypsy is also a versatile wine, try with oysters or anything else that takes your fancy. Serve chilled.

Aster has a gentle aroma of strawberries and plums, ripe but not over-ripe. There is the mildest whiff of spice too. The palate is silky and supple with those lovely red fruits swimming through the middle. Lovely, almost imperceptible tannins frame the wine and make it a most delicious drink.

This is a lovely fresh bright Shiraz, true to region and variety. There are bright red and some dark fruits on the nose, a hint of chocolate and a mere whiff of oak. The tannins in the mouth are smooth and overall the wine is fresh, juicy and quite delicious. Try it with a Tuscan pepper stew or Peposo and if you have enough Scarlet Runner, you could use it to make the dish, too!
