Japanese Umeboshi Plum Vinegar is not really vinegar but a pleasantly tart and salty juice extracted from making pickled Umeboshi plums. As it isn't fermented, it is suitable for those who are yeast intolerant and contains many of the healing qualities and nutrients associated with the pickled plums. Plum vinegar is produced during the pickling process from the liquid that rises after salt-soaked Japanese plums are pressed with stone weights. While it is not true vinegar and there is no acetic acid, the citric acid dissolved in the plum vinegar creates a strong, sour taste. It also contains a large amount of beneficial substances such as pectin and polyphenol.

Containing organic sugar and sea salt, making sushi has never been so easy. Cook 1 cup of sushi rice and then with a paddle or wooden spoon, break up the hot rice. Use a fan to slowly cool the rice while sprinkling about 30 ml of Sushi Vinegar. Once cooled, your sushi is ready to be moulded and served. Done properley and slowly this should give a shiney looking individual grained rice.

Red wine vinegar is made by allowing wine to ferment until it sours, producing acetic acid. Once fermentation is completed, the vinegar is strained and allowed to age in wooden barrels, and the longer the vinegar ages, the more mellow the flavour becomes.

Spiral Foods organic Japanese Brown Rice Vinegar is a naturally fermented flavouring agent made from organic brown rice that is fermented in earthenware vats that are over 100 years old and buried in the ground on the island of Kyushu.
One of the most nutritious vinegars, it is not only prized for its taste, but also as a beauty aid and medicine.
While most commercial rice vinegar’s are made by pounding crushed rice, Spiral Foods is still made traditionally, using organic wholegrain rice and no added sugar or alcohol.
Spiral Foods rice vinegar is made in two stages of fermentation.
First Stage: steamed rice is mixed with koji (starter) and water. This process forms a saccharified moromi. To this mix a live enzime 'Shubo' is added to change the sugars to alcohol. This sake takes 1 month.
Second stge: The sake is mixed with seed vinegar and heated, this process takes 2 weeks.
The vinegar is then ready for aging which takes one year.
