Quick Nectarine Crumble
Serves 2 | Prep 5 min | Cook 10 min | Ready In 15 mins
4 medium firm nectarines
1 tsp unsalted butter
4 tbsp natural unsweetened yogurt
100g almond nut crunch granola
1 tsp fresh thyme leaves
Coconut oil to cook
Drizzle dark agave syrup
Sprig of thyme
1. Place a grill pan over a high heat. Brush with coconut oil.
2. Slice the nectarines in quarters and place in the hot pan. Char each side for approx. 1min. While still hot, place in a heat proof bowl, add the butter and half the teaspoon of fresh thyme. Gently stir to coat all the nectarines.
To serve; place the nectarines on a plate, top with natural yogurt, drizzle of dark agave syrup to taste, crumbled almond nut crunch granola and the remaining thyme sprigs. Easy instant crumble.
You can substitute nectarines for peaches, pineapple and any of you favourite firm fruits.
