Questions & Answers

Can you freeze pure cream?

Yes, you can. However, because of the high-fat content, the texture of the cream changes drastically when frozen. It is not recommended to freeze the cream for more than a couple of weeks.

Is pure cream the same as double cream?

No. While they are both cream they are not exactly the same. They share common characteristics - double cream does not contain any thickening agents and has a fat content of at least 48%. Whereas, pure cream has a fat content of around 40%.

Can you cook pure cream?

Yes, you can cook pure cream. In fact, it is one of the most popular ingredients in a lot of dishes including pasta and Indian curries.

Since they have a higher fat content they have better stability than milk. Watch out though, adding too acidic ingredients like wine or tomatoes might cause it to curdle.
