Organic Cheddar

About the product

This cheese is produced according to traditional cheddar making techniques. It has a moist and creamy texture and a delicate yet full flavour. According to the cheese-makers, the organic milk produces a particularly sweet and clean tasting cheese. Our cheddar is matured for at least 6 months before being released and is made using vegetarian rennet. It makes a cracking cheese toastie, especially when combined with a good organic sourdough.

In response to consumer demand we launched organic mozzarella from our Mortlake factory in May 2021. To ensure we stayed true to its Italian heritage we enlisted the help of Fabio who has 35 years experience making mozzarella and previously made the only Australian organic mozzarella which was discontinued a few years ago. This cheese-making skill combined with the rich biodynamic/organic milk from our farmers in Western Victoria, has produced a traditional mozzarella ball which is soft, delicate and most importantly stretchy with subtle flavour and a creamy texture
