About the product

This terrific small batch gin, inspired by the flavours of the Mornington Peninsula, is distilled by Garagiste Vintners in collaboration with Melbourne's The Craft and Co distillery.

They use 20 different botanicals, including foraged ingredients such as local samphire, saltbush, kelp, wild fennel, and wild fennel pollen to impart the all-important coastal experience. All this is mixeswith plenty of juniper notes to create balance.

This is far from your average spiced Rum. First of all, it is Scotland's first and only Rum, made in a purpose-built distillery in Banchory.

Dark Matter's infusion takes in a swathe of fresh ginger, green peppercorns, hand-crushed allspice berries and Indian long pepper. Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added back.

In basic terms, Old Tom is an older style of Gin recipe--traditionally slightly sweeter--bridging the gap between modern London Dry Gin and the older Genever.
Utilising an organic grain base, the Dodd's Old Tom introduces fennel seed, lemon peel, a healthy dose of liquorice (which delivers the mouthfeel and sweetness), alongside juniper, angelica and fresh lime.

45% ABV. What is Peated Bourbon? It’s bourbon whiskey that conforms to the American requirements for bourbon but is made with malted barley that has been exposed to peat smoke, a practice more common in Scotch whiskies—the malt we use for the peated bourbon was even grown and kilned in Scotland. So it’s a hybrid whiskey of the two traditions, flavorful and robust from having aged in a new barrel, with an added light smoky finish reminiscent of single-malt. If scotch and bourbon had a baby, this is what it would taste like. As far as we can tell, ours was the world’s first ever peated bourbon and will appeal to the adventurous whiskey traveler who has tried everything.

Haiti is littered with distilleries (over 500) and the small-scale producers are often quite industrious and adventurous in their use of home-made equipment. Processes are still ancestral and therefore very pure cane spirit is often produced. The Haiti component of this white spirit is made Agricole-style (with sugar cane juice rather than molasses). The Jamaican component is from the Trelawny Parish, where the fermentation was long and wild, producing a high-ester Rum with plenty of funk. All components were pot distilled
