Spiced Rum

This is far from your average spiced Rum. First of all, it is Scotland's first and only Rum, made in a purpose-built distillery in Banchory.

Dark Matter's infusion takes in a swathe of fresh ginger, green peppercorns, hand-crushed allspice berries and Indian long pepper. Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added back.

.Negroni Australiano is a dazzling hodgepodge of 45 fruits, herbs, tinctures, and distillates. A bittersweet communion of four kinds of citrus, native river mint, and lemon-scented gum; harmonising with earthy beetroot and jolting wormwood.

An all-Australian triumvirate of our Sydney Dry Gin, Imbroglio Amaro, and unfiltered Maidenii Sweet Vermouth, this almost traditional cocktail is at once nostalgic and uncanny. Ready to serve right now, pour over ice with an orange slice.

Pina Colada Gin

About the product

A limited release seasonal Gin from Poor Toms, inspired by their team's favourite cocktail. Only 5,000 bottles produced. This is a juniper-forward Gin (not a Gin liqueur), with tropical botanicals including coconut, pineapple, pandan leaf, lime, nutmeg and allspice.
On the nose, there's a nice kick of juniper with an underlying tone of caramelized pineapple and vanilla. Toasted coconut and hints of sea-spray and citrus add freshness.

Originally conceived to loosen the mood at family weddings, this Strawberry Gin is for all occasions! We steep fresh strawberries, young ginger, and hibiscus flowers in our Sydney Dry Gin - imparting a rich pink hue and fresh complexity. The addition of intensified cardamom and cubeb pepper distillates, elevate the delicate sweetness of the strawberry.

41% ABV, 700 ml. Sweetdram Smoked Spiced Rum is a deliciously dry, new wave cocktail Rum without a pirate or a sea monster in sight.. Here Sweetdram's team take a proprietary Rum base - -blended from Guyanan, Jamaican and Bajan (Barbadian) Rums - and infuse it with grains of paradise, chamomile, lime leaf, fennel and cardamom. Lapsang and organic figs, warm-smoked over oak at the distillery, impart the smokiness. Unlike many (almost all) other 'spiced' Rum brands, Sweetdram doesn't add a single iota of artificial flavours or sugars.

Considering Felix Clark started his spirits journey in a quest for the perfect Negroni Gin, it stands to reason that his prebatched Negroni has plenty riding on it. Ester’s blend takes in equal measures of Ester Dry (the holy grail itself), Campari, and “the best damn Vermouth on the market (when you can find it!)”—Cocchi Vermouth di Torino. To mimic the icy stir down in the mixing glass, Clark uses 20% filtered water.
