Ingredients
1 medium eggplant diced
1 large zucchini sliced into rounds
1 large yellow squash sliced into rounds
1 red capsicum chopped
1 brown onion sliced
3 cloves garlic minced
4 ripe tomatoes chopped or 1 can crushed tomatoes
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried oregano
half tsp chilli flakes optional
salt and black pepper to taste
fresh basil or parsley to serve
Instructions
Heat olive oil in a large pot or pan. Add onions and garlic and cook until soft.
Add chopped capsicums and cook for 5 minutes.
Add eggplant zucchini and squash. Cook for another 10 minutes.
Stir in tomatoes thyme oregano chilli flakes salt and pepper.
Reduce heat cover and simmer for 20 to 30 minutes until vegetables are tender.
Adjust seasoning and serve with bread rice or as a side dish.
