This Thai Red Curry is Amy's dad's favourite. It has finely cut vegetables - sautéed onions, broccoli, carrots, tofu and delightfully sweet butternut squash in an authentically spiced smooth coconut milk-based curry sauce. Fragrant jasmine rice completes this meal that has no dairy and no wheat, and is absolutely delicious.
