This London distiller has emerged as one of the most exciting, and exacting projects of the UK’s artisanal spirit boom, and their Gin – Dodd’s – is undoubtedly one of the very finest of its genre.
Dodd’s gin have sourced their botanical ingredients from organic farms and so the gin is 96% organic.
These botanicals include Juniper and Angelica, along with fresh lime peel, red raspberry, bay laurel, and cardamom and the honey is local being sourced straight from the rooftops of London.
Dodd’s uniquely use two separate distillations; the bulk of the botanicals are distilled in a relatively small copper, while the distillation of the more delicate botanicals take place in a small, bespoke ‘Cold Vacuum’. The two spirits are blended for several weeks before bottling.

The white Les Chèvrefeuilles 2018 is a rare example of a Clairette-dominant white with 50% Clairette, 25% Roussanne and 25% Grenache Blanc. All the fruit is drawn from the Domaine's cooler, east-facing lime-rich soils. The fruit is whole-bunch pressed and fermented with natural yeasts before resting on its fine lees, in concrete, for eight months before bottling. It's a succulently mouth-filling white Rhône, with pulpy ripe pear, citrus and jasmine aromas and flavours balanced by some lip-smacking salty minerality (from the Clairette) and vibrant freshness. Pure-fruited and delicious. Drink this now and over the next few years for maximum refreshment.

It's a lovely wine of great finesse that offers complex aromas and flavours of mulberry, raspberry, licorice and musk along with hints of violets, thyme, bay leaf and white pepper. There's a beautifully silky texture leading to a super spicy, bright and refreshing close that scents the mouth after swallowing. There's also some fine powdery tannins (typical of the limestone-rich soils of Sabran).
